I am not saying that long haulers / PASC is all due to EBV and the other herpes viruses, but they certainly seem closely associated with the constellation of symptoms. Reactivation, increasingly common with age and immunosuppression, also has been offered as a likely co-morbid factor in severe covid.
There are likely multiple triggers for reactivation of EBV and the other herpes viruses, both psychological and physical stressors. The stress of ICU admission alone has been shown to reactivate EBV.

The only latent pathogens with which I am familiar are HIV and the herpes families. Don't forget that EBV, CMV and chicken pox are all herpes viruses, though I haven't heard of varicella contributing to covid.
Much as I don't want to dismiss any suffering after covid infection, a recent study offered that many of the LH symptoms are common in the larger uninfected population. It is very easy to ascribe suffering to a recent infection.
All of this currently just correlation. Causality will take time. Fingers crossed that trials with Leronlimab and other agents will bring both clarity and relief.
