Eleven Madison Park had a major announcement to make when it reopened its stately dining room last month for the first time since the pandemic began. The acclaimed New York restaurant — possessor of three Michelin stars, once named No. 1 on the “World’s 50 Best Restaurants” list — would no longer serve animal products.
