Several places called Brunswick, claim to be the place that Brunswick stew was created. Whether it was Brunswick County, Va, or Brunswick, Ga, or the Duchy of Brunswick-luneberg in N Germany, it originally contained squirrel, rabbit, maybe raccoon, opossum etc. These days more chickens and pigs of course.
The version I know the best is essentially a pre-revolutionary history of the southern coast and its people. I subscribe to Brunswick, Ga being the founding place, but Virginia was about the same at that time. All towns were on the east coast.
When folks came to the New World in wooden boats, the voyage was difficult, over seas, and cargo was limited. Yes of course, blacksmiths set up shop right away, but on some of the Island Communities, only one or two families had iron pots or cauldrons, and those came on the boat from England.
So the story goes that after Church on Sundays the Brunswick, Ga founding families, gathered over an open fire, with a cast iron cauldron brought from England, without ice or refrigeration, cooked down all the semi-rancid meat, bones, semi-rotting vegetables, with some fresh onions, garlic, pepper etc and boil it down to a stew. Then they finished it all off with some fresh beans, tomatoes, corn, squirrel, chicken, pig, shrimp etc.
So each week, in one pot, in one community, throw in everything that needs cooking, toss in few fresh treats on top, and eat. Squirrel, rabbit, raccoon was always apart of that.
