Recipe alert: the Crowder Peas have been coming in

Crowder Peas have arrived in the Americas via Africa, as well as, and closely related to black-eyed peas. Cool fact is the reason they are called Crowder Peas is that they are so crowded inside the pod that from there they get their squashed shape. They’re also very creamy when cooked. Remember that for later.
Many of the recipes are similar to black-eyed peas. Some combination of Salt pork, bacon, ham. Onions, garlic, peppers. Etc. This was the first type of recipe I did. I strained them and did a Hoppin John type of thing. I finished them with green onions, tomatoes, and a dressing. Great with cornbread.
But they are so creamy. Here’s the real recipe alert. Next, I’m going to make hummus out of them and serve them with pita. Oil, lemon, garlic, sesame/tahini etc. Like the stylishly topped grocery store varieties, I think I’ll top my crowder pea hummus with something appropriate too. In the southern American vein, I’m thinking of Vidalia onion, peach, pecan, and jalapeño compote. Maybe I’ll try to serve with deep fried collard green chips. Afterthought?
