Reheat the eggplant from frozen at 275 for 40 minutes in a covered casserole dish or baking pan with foil.Thaw the sauce and bring to heat and saute some 1 inch cubes of boneless chicken breasts and add to the sauce.Serve over rice or linguini with copious amounts of grated romano cheese.Spoon a little sauce over the eggplant and add grated romano cheese.
These items keep very well in shipping so don't worry if they are partially or completely thawed when you get them.It just adds to the aging process.
