To build new greenhouse without disrupting current operations, Sunset Island Group must be planning to build the new one on top of the old one. Maybe the new one will be a little wider so they can lay the concrete foundation around the old greenhouse and build up the side walls. Right before they put on the new roof, they remove the old roof.
