8th, I teach a course Called Serve Safe. This is mandatory in Culinary Schools. It teaches food safety and Food Borne Illness Prevention.

I have a theory that involves food prices. Food Borne Illness means illnesses that people are exposed to through the delivery system of food intake.

I am teaching my students that a great deal of serious illnesses are transmitted by Ultra Processes Foods. Heart Disease, Diabetes, Obesity
ect can trace the source of these problems, in low income families, to ingesting Ultra Processed Foods.

During my years working in the Inner City of St Louis, one of the poorest communities in the US, the bulk of their diet came from convenience stores as that is all that is available. No supermarkets and food stores will operate in North St Louis, Murder Capital of the USA. This is not unusual for cities like Detroit, St Louis Chicago ect.

New Ideas a taking root. Old school buses are being refitted to carry fresh produce on either side of the bus and folks shop "On the Bus" as the bus stops in the neighborhood like a veggie market on wheels. Foods being grown on the roofs of old buildings as started by Louisville Kentucky Folks,
summer gardens are being started in lots where old buildings are torn down.

So the issue of inflation of food prices and availability of real food to our poorer communities is HUGE!
