but for years they were telling us that eating food with cholesterol was bad for us. Now my doctor says "eat two eggs a day, it has stuff in it that's vital for brain function." That would be choline and B vitamins -- eggs are about as close to a perfect food as you can get.
seriously it's smart, if you're going to eat processed meats, to try to get the stuff that does NOT have nitrates/nitrities -- it's pretty easy to find these days.
