I started with the Memphis BBQ and the sweetness immediately hit me. I actually didn't like the initial sugary burst. I tried another small piece and caught some of the competing flavors. A bit of onion and garlic which mixed in. It was an unusual flavor complexity and kept me guessing with each piece. The jerky was moist and tender, even a bit sticky and had none of the stringy, tough feel on the pallet.
I tried the New Orleans Whisky next and could immediately taste the infusion of alcohol. The flavor was heavier then the BBQ and had a hint of spice, which kicked in after chewing, but disappeared quickly. Another very tender and moist piece of meat with no difficulty in chewing and no tearing necessary.
The Outlaw was my third try. The closest thing I can describe to this flavor was a marinated flank steak. A few pieces were a little more traditional with toughness, but again no stringy, fatty taste you get from some jerky brands. It was definitely my favorite as the sweetness factor was downplayed with a more smoky emphasis and small kick.
In all, the flavor profiles are very complex. I found myself revisiting all three bags and allowing the jerky to sit between check and gum, sort of like the baseball players do with tobacco. I simply wanted to taste the flavor in each as they competed with each other. To say this is not Jack Links, Ballpark or others would be an understatement. This stuff is pure gourmet.
Along with the sex appeal, eye candy of the packaging, nice aroma's coming from the bags and multiple flavors, I think HJOE hit a home run with this steak they're calling jerky. It definitely surprises the pallet with each different piece.
