Just my personal layman opinion, based on my experiences when i have to create any written material from scratch - it's tedious and time consuming work.
I can ansolutely see how creating a complete written process data set can be a daunting task.
Flying ( which for a plane is akin to what driving is for a car ), provided the plane is in airworthy condition, and some drills (which are well documented and trained for), should be smooth sailing.
