I was thinking that me being in food service the only time this sector comes close to being in a paradigm is when a new cuisine, or a 500 calorie or less meals sweeps through the US and everyone one thinks this is the answer to lowering cholesterol medical issues and weight lose problems...........sure sure what ever.
Food service is a little boring, every once in a while some chef comes up with a new way of cooking polenta...like on the roof of a house.......Really

So I wanted to let you guy's know about a new animal in the groceries stores now available. Originally from Mexico and then migrated to Texas years ago and most recently populated like rabbits now being farmed to market about $1.42 lb.............great price
So while at the meat section look for them around 4 to 8 lb average that should be the most tender , They kind of look like a monkey in a bag with wings pointed tail and fangs. When you get home soak it in milk over night they are very gamy in flavor...........like Elk ,shark. After a 24hr soaking drip dry snip of the wings & pointed tail leave the feet we will need to hang him upside down when we remove the head and fangs so the blood can run out once these procedures are completed now your ready for the grill, smoker, braising, poaching or have someone else cook it..........or put it on the roof of your house midday.
Anyway ranchers hate them and shoot them on site, they fly around the ranch disrupting cattle goats all the animals. They land on the cattle and they just start sucking the blood from all the ranchers animals, this has become very costly for ranchers .
