Being a little cheeky with a recipe. But since we will be waiting until after Friday 11/22 for any updates, next week is Thanksgiving week, and I do expect a steady drumbeat of news, but not before early December, I’d like to share a comforting Fall soup that you might prepare and keep warm in a crockpot while your loved ones gather next week.
Pumpkin and black bean soup at the end of the day is an international fusion soup of Thai and Central American notes. As an American, I’m used to pumpkin pie and Jack-o-Lanterns. But of course we waste pumpkin as the incredible vitamin and fiber rich food source that much of the world utilizes regularly. Welp…
You can look up 100’s of recipes online, but whatever you choose,drizzle some coconut milk on the hot bowl of soup, toss some Pepitas (roasted pumpkin seeds), cilantro, and a squeeze of lime. Serve with corn chips if you’d like, but I’ll be hooking up some fresh loaves of sour dough bread.
Here’s the one I’ve been doing. I add a bunch of shredded rotisserie chicken. Another version I’ve tried adds a lot of ginger root.
