As an IT guy, I can say that data can always be deleted and happens quit often.
Every company "should" have the data backed up.
Even if the data was backed up it can be lost. Normally we only keep backups for a few months back. Then we reuse the space to make new backups, so the old back ups are only retained of a period of time. If the data was backed up and then overwritten by a newer backup before you realize you have lost some data in the current data. You don't have a backup that goes back far enough to recover the lost data.
This would be an issue that you surely would not want to admit in public.
