Peanut Butter Cookies
½ c. butter, softened
1 c. peanut butter
½ c. sugar
½ c. packed brown sugar
1 egg
½ tsp. baking soda
¼ tsp. salt
1 ¾ c. AP flour
1. Combine butter, peanut butter and sugar and mix until fluffy
2. Add egg and vanilla and mix until uniform
3. Add sifted dry ingredients to peanut butter mixture and beat until well combined
4. Scoop with a black handled scoop onto a parchment lined sheet tray
5. Using a fork press down the balls and create a criss cross pattern
6. Chill the dough for at least 30 minutes
7. Bake at 350 deg F for about 7 minutes or until slightly brown at the edges
