I wouldn't know, but many celebrities are notorious for that, and think their mere presence is "tip" enough. That being said, if you google "Bubby's Celebrities", you will see that JFK Jr. (RIP) was a regular at the original location in Tribeca (still there after 28 years), and Taylor Swift and lots of others (JZ, Beyonce, etc.) are regulares and are all great tippers/take care of the staff, so we are very luck that way. And for the movie buffs, The Anne Hathaway's boyfriend in the Devil Wears Prada worked at Bubby;s in the movies, and it was filmed there.
