I suggest you visit the website Investopedia and look up "Bid Size".
There are both Hidden Bids and Reserve Bids which can affect the actual size of the quotes that are shown.
A reserve order is popular whereby the order shows a smaller size while secretly trying to buy/sell a larger amount. You must usually request this through your broker.
