Let's test for e coli in meat with traditional methods, ship all the meat out to dozens of outlets, find out it is contaminated and then issue a recall hopefully before people get sick or worse.

Lets test meat for e coli, have results in 1/2 an hour and not ship product out to the dozens of outlets. No one gets sick and my business does not get a black eye or worse (out of business).
