A unique visitor is one that has not visited the site before in any given timeframe.
This means that over the course of this timeframe (say a month), a unique visitor may view the site 100 times, and view 1,500 pages, but they will only be counted as a unique visitor once.
After the timeframe resets (next month) they will be counted as a unique visitor again the next time they visit the site, but this will only happen once a month (or whatever the time period used).
These differ from pageview statistics where each page is counted, regardless of who is viewing it and where they have been before.
