I can't find the source right now, and I will post if I find it, but I remember reading that the flights should resemble normal flight operations with FAA officials on board. During the flights, however, there will be certain situations presented to see how the crew reacts.
The 100 hours are split 50 domestic 50 international, some of which would have to be flown at nighttime.
