A side note about Luis Pelayo on the far right. He is the new lab tech at MMTC and he has had 15 years in the food testing industry. He has done all the types of testing from agar plates to PCR. He told me that at the last place he worked they had a state of the art PCR machine that just sat in the corner unused because it ended up being too time consuming and involved to run. He understandably was excited to use the MIT1000.
