FITX Skittle Sugar Cookies cookie recipe from Jennifer A.K.A playtime
2 cups all purpose flour
1 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
1/2 cup butter, room temp.
1 1/2 cups sugar (plus more for sprinkling)
1 large egg
1 tsp vanilla extract
1/4 cup sour cream or plain yogurt
Skittles
Preheat the oven to 350 degrees
In a medium bowl, mix together the flour, baking powder, salt and baking soda. Set aside.
Using a mixer on medium speed, beat the butter and sugar until light and fluffy, about 2-4 minutes. Add the vanilla extract and the egg. Beat well to combine.
With the mixer on low speed, beat in half the flour, followed by the sour cream and then the remaining flour.
Toss in about 1/3 cup of skittles.
Roll cookies into fairly large balls 1.5-2″ and roll into sugar.
Place 2-3 ” apart on a parchment lined baking sheet and press a few skittles onto the top of each cookie.
Bake for 20-25 minutes.
