Star - I just cooked my 1st crispy chuck roast.
Cooked it by mistake 9 hours at 350. ouch.
Must have been a really good chuck roast (a rarity these days)
After the crispy burnt bottom it went from a stringy layer to a juicy tender layer
which was very flavorful.
